Boruga o dulce de leche cortada.. Sweet Buttermilk

Entre los postres cubanos hay uno que no se sabe bien como nace, probablemente alguien dejó la leche al fuego y se descuidó, el tema es que la leche se consumió y nació la "Boruga" o dulce de leche cortada...
Es sumamente fácil de hacer, simplemente hay que tomar 1litro de leche y añadirle el jugo de 1 limón , esperar con paciencia que se corte y se cuaje bien,cuando los grumos sean grandes, se le añade 1 taza de azucar y una cascarita de limón y se lo pone a fuego mediano, empezará a hervir, hay que observarlo para que no se derrame la espuma,y revolverlo de vez en cuando, en el lapso de 45 minutos mas o menos se reducirá, está listo cuando los grumos se solidifiquen y se tornen de color beige con una especie de almíbar ..

Antes de empezar  debo contarles que esta receta llega a ustedes copiada textualmente del libro "Cocina al Minuto" de Nitza Villapol y Martha Martínez ,edición 1965.
La "Ropa Vieja" es una receta donde se aprovecha la carne vacuna que ya se usó en una sopa o caldo, en Cuba esta carne se denomina Falda.
Era un plato diario en la Cuba de antes de 1959, con la Revolución aparentemente hasta las vacas emigraron, pues nunca mas conseguimos carne de res...en fin, mi pobre patria ha sufrido mucho esta tiranía a la que no se ve final...



2 lbs. de falda real (cocinada de antemano en el guiso o sopa)
1/3 taza de aceite El Cocinero
1 cebolla
2 dientes de ajo
1 ají grande
1 lata de salsa de tomate
1 cdta. de sal
1 cdta. de Ac'cent
1 hoja de laurel
1/2 taza de vino seco
1 lata de pimientos morrones

“Separe la carne en hilachas o hebras finas.

“Corte la cebolla en rueditas finas y el ají en tiritas. Machaque los dientes de ajo y sofríalos en el aceite caliente con la cebolla, añada después el ají y sofríalo un poco.(en mi casa  una vez que deshilachaban la carne la ponian en un bowl con cebolla cortada en daditos y un par de dientes de ajo machacados sal pimienta y jugo de limón o naranja agria y lo dejaban marinar hasta el momento en que se fueran a cocinar.. el sabor era inigualable) Añada los demás ingredientes y déjelo cocinar tapado a fuego lento durante unos 15 o 20 minutos, revolviéndolo ocasionalmente para que no se pegue. Los pimientos morrones pueden añadirse picaditos, molidos o usarse para adornar. Sírvalo con arroz blanco y una buena ensalada fresca. Da 8 raciones.”
 
 
 
Ropa Vieja "Old Clothes"

Papas fritas con huevo frito y una historia de la farandula argentina....French fries with fried egg and a history of an argentine celebrity..


Anoche ,mientras pensaba que cenar, me acordé de mi abuela materna, y uno de sus platos favoritos (y mio tambien), riquísimo y sencillo, cuando ella lo hacía todos nos saboreábamos, la clave era sacarlo en el punto justo..
Las papas fritas, cortadas en juliana, metidas en agua por lo menos por 1 hora para que suelten todo el almidón y queden crujientes y doradas (y engorden menos)..
las sacaba del agua, las secaba bien con un paño seco y las ponía a freir en abundante aceite muy caliente. ( aqui un truco de mi amiga "La Pato" Patricia pasa las papas rapidamente por harina  antes de freirlas , quedan asombrosas!! crujientes, secas y tostadas) una vez que están doradas las pasaba a un papel absorbente.
En una sartén de teflón ponía un hilillo de aceite colocaba las papas fritas en forma de nido dejando un agujero en el centro y le ponía 2 huevos, que previamente abrió en un cuenco aparte ( de esta forma cuidaba que las yemas no se rompieran y que los huevos estuvieran en buen estado, era muy previsora la abuela), y ahi lo tapaba, en pocos minutos ya estaba listo ,el punto justo era cuando la clara de huevo ya estaba cocida y la yema aun estaba jugosa..
no puedo recordar la ultima vez que comí este plato tan sencillo como delicioso...quizas este domingo lo cocine..

En el primer acto de esa obra Shirley en lugar de cocinarle un bisteck al marido le hace papas fritas con huevos fritos  y ella en escena mientras monologaba iba pelando las papas y comenzaba a hacer los huevos fritos con papas fritas, la escena era corta y las papas no se llegaban a freir, cada noche despues de sentir el olorcito de los huevos fritos veia como lanzaban el contenido de la sartén a la basura, incomible, las papas medio crudas y los huevos perfectamente fritos..
Pero yo espiaba tras bambalinas y disfrutaba el olor todas las noches..

Los plátanos cubanos ..........Cuban banana


Los plátanos en Cuba son de las frutas mas apreciadas, entre las variedades que se pueden encontrar en toda la isla las mas apreciadas son los "platanos burros" ,los "Platanos manzanos" y los platanitos maduros...
Platanos Burros"Tarro de Buey"

Los plátanos burros (Tarro de buey y platano burro) son exclusivamente para freir, tanto verdes como maduros, aunque los resultados son diferentes.
Con los plátanos verdes los cubanos hacemos las "chicharritas" que son finas lonjas de plátano verde cortadas a cuchillo o con  mandolina, que se frien en aceite hirviente. chicharritas de platano . Se sirven calientes espolvoreadas con sal.

Fufú de plátano

En mi casa mis abuelos primero hacían chicharrones de puerco, cortaban la piel del cerdo en daditos ,cuidando que por debajo quede la capa de grasa y de ser posible un poco de carne tambien, estos trozos  se ponen con un 2 cucharadas de aceite en una olla de hierro y se los deja derretir a fuego fuerte, la grasa del cerdo se licuará y la piel y la carne se irá cocinando en su propia grasa, cuando está bien doraditos y han soltado toda la grasa se los saca y se los escurre, estos chicharrones son la delicia para comer con una cerveza helada mientras se espera la cena

Croquetas de pollo - Chicken nuggets

Las croquetas llegan a Cuba tambien de la mano de los europeos, mi madre y mi abuela solían hacerlas los domingos y las guardaban en la heladera para irlas comiendo en la semana.
Todo comenzaba con una buena salsa bechamel hecha con leche ,harina y mantequilla, ellas la hacían a ojo, pero para tener una receta como guia , las proporciones serían mas o menos estas:
para 1 litro de leche  aproximadamente 60 gramos de harina (6 cucharadas aproximadamente) 50 gramos de mantequilla , sal y pimienta a gusto.

Muchos cocineros comienzan la receta calentando la mantequilla y añadiendole la harina y revolviendo vigorosamente hasta que se espese, en casa lo hacían al revés, calentaban la leche con la mantequilla, pero previamente reservaban 1 taza de leche fria en la que disolvían la harina, cuando la leche hervía , añadían esta mezcla de leche y harina y revolvían todo hasta que espesaba.

Una vez fria la bechamel , procedía a armar las croquetas las pasaba por huevo batido y pan rallado un par de veces y las volvía a poner en la heladera  para que se secaran y endurecieran.

Las presento en un plato adornado con hojas de lechuga y brotes de alfalfa con un dip de mayonesa de costado ,y rodajas de limón alrededor.
Este fin de semana voy a hacer una tanda de croquetas....no puedo esperar al domingo!!

Otra versión se hace con jamón cocido , (jamón de york para los europeos, o jamón dulce para otros países) el jamón se corta o incluso se ralla y se incorpora a la salsa bechamel , el resto de los pasos son los mismos que para las croquetas de pollo
.

Hay mucha fábula y muchas variantes de este trago en el mundo, la mas tradicional es esta:

En un vaso de trago largo colocar :
-2 cucharadas de azúcar
-el jugo de 2 limones
-un ramito de Hierbabuena
(en este momento algunos maceran la hierbabuena con el azúcar y el limón, a mí personalmente, no me gusta que la hierbabuena invada demasiado asi que no la macero, pero esto es a gusto del consumidor).
-2 onzas de Havana Club 3 años (Carta de Plata)  si usted es bebedor habitual pude querer mas fuerte el trago y colocar mas ron.
-2 piedras de hielo medianas
completamos el vaso con agua carbonatada (soda)
Este es el Mojito como lo hacen en "La Bodeguita del Medio" en La Habana...
una auténtica delicia para los veranos calurosos...

YUCA CON MOJO

La yuca con mojo es una delicia tradicional cubana, su origen es incierto, pero la historia sugiere que fue un plato que popularizaron los africanos que fueron traídos a cuba como esclavos. La yuca es un tubérculo que apreciaban los taínos , nativos precolombinos cubanos. En el resto de América se la conoce como Tapioca o Mandioca, en línea general su cocción es fácil pero hay algunos trucos que harán la diferencia.
1- Siempre hay que elegir los trozos gruesos y parejos
2- Observe detenidamente la zona blanca, si presenta puntos o líneas grises es señal de que la yuca está infectada con un hongo, no es comestible.
3-Observe la cáscara, debe ser pareja y no tener agujeros que indiquen nidos de insectos.

Una vez limpia, cortaremos la yuca en trozos medianos y le sacaremos toda la cáscara, debe quedar absolutamente blanca, esta yuca limpia y pelada irá a una olla con abundante agua y sal , deberá hervir largamente hasta que se ablande.
Destaco que será un hervor largo porque  sin una olla de presión puede demorar hasta 2 horas en ablandarse.
Importante: la yuca debe hervirse a olla destapada, porque los vapores de este hervor son un tanto tóxicos.
