Asado de 1ero de Enero - January 1srt Asado
El 1ro de Enero lo pasamos con la otra parte de la familia y ese dia hubo tradicional asado argentino.
el asado es como un deporte, fascinante y a mi en lo personal, me encanta hacer asado, esta vez no fui yo el asador sino un primo , pero hoy les cuento como viene el asado desde el principio...

Debo comenzar con una disculpa, la verdad no he tenido demasiado tiempo para escribir en estos ultimos meses, pero ahora ,ya mas tranquilo y desocupado los voy a poner al dia de todo lo que he cocinado en estas semanas.

Este mes de diciembre en Buenos Aires hubo demasiado calor, la realidad es que tuvimos una ola de calor asfixiante con semanas enteras de 38°, eso incluyó las noches de navidad y año nuevo, y ¿qué podemos comer con tanto calor?¿qué podemos cocinar que sea rico y liviano? sentíamos que moriríamos de calor en esos dias, así que nos aprovisionamos de cervezas, sidras, champagnes ,botellas de gaseosas de varios sabores , jugos naturales, frutas, mucho hielo y nos dispusimos a pasarla lo mejor posible.
Last december Buenos aires had a big heat wave, 38°c all the day in several weeks, including Christmas night and newyear night, here in Latinoamerica we don't celebrate thanksgiving night ,but Christmas and December 31th, those 2 nigths are for a big family party, those partys are extended to DEC.25th and JAN.1rst , and with those really hot days ¿what we can eat?¿what we can cook easy, ligth and yummy?
Honestly we think we gonna die because of heat, we go to the market and shop beers, cider, champagne, soda, fruit juice bottles,and ice, so much ice!!, and lest go celebration!
Ensaladas, son sumamente sencillas y faciles de preparar, además son frescas, ricas en vitaminas, livianas y ayudan a no deshidratarte.
mis favoritas:
-Rúcula, tomate y parmesano, no tiene ciencia, es solo lavar muy bien la rúcula (en algunos países se conoce como urúgula o erúgula), mezclarla con tomates (en la foto eligieron tomates cherry, pero cualquier tomate queda muy bien) cortar muy finas lascas de queso parmesano, si no tienes mandolina puedes usar queso rallado, pero queda mas rica la feta de queso , y condimentas con aceite de oliva, limón o vinagre de manzana y sal marina (la sal marina es mas saludable que la sal de salina)

La segunda ensalada que preparé es un poco mas rara pero su sabor es excelente, es la ensalada de remolacha y melón, el melón que usamos es el tradicional melón verde (no la sandía), la remolacha la herví hasta que estuvo blanda, luego ,le retiré la cáscara, la corté en trozos y la puse a enfriar, cuando estuvo fria, corté el melón en trozos pequeños ,y media cebolla morada en finas plumas, el resto fue mezclar y aderezar, para esta ensalada elegí un aceite neutro y vinagre de manzana, nuevamente sal marina y unos hilos de un aceite saborizado con chiles ahumados que preparé hace un año,desafortunadamente no tengo fotos de mi ensalada terminada. pero les dejo fotos de los ingredientes.

Es ideal usar varias especies de lechuga, luego de lavarlas muy bien las cortas a mano ,para que no se oxiden, cortas el pepino muy finito ( a mi me gusta con cáscara), y lo añades al bowl, luego pelas la naranja y le añades los trozos, finalmente en una sartén tostamos semillas de sésamo y las añadimos, el aderezo será jugo de limón ,jugo de naranja, aceite neutro, sal marina y un cucharadita de mostaza, con esto hacemos una vinagreta y se la añadimos por encima antes de servirla

Para este escabeche de pollo compré 4 pechugas limpias y deshuesadas, las puse a hervir con 1cebolla mediana ,2 zanahorias enteras, sal, pimienta, 1 hoja de laurel y un chorro de vinagre de alcohol, cuando el pollo está perfectamente cocido, lo dejamos refrescar dentro del caldo , de esta manera evitamos que la carne de pechuga se seque demasiado. Cuando ya está fresco el pollo, lo cortamos en pequeños trozos o daditos, cortamos la zanahoria en trozos del mismo tamaño que el pollo, la cebolla cocida la añadimos cortada en juliana, en una fuente acomodamos la zanahoria , el pollo y la cebolla y añadimos cebolla morada y morrones cortados en finas tiritas, tomates frescos cortados en cubos, y algo de pepino que haya sobrado por ahi, ahora añadimos media taza de aceite neutro y 1/2 taza de vinagre (cantidades suficientes para que el pollo y los vegetales queden mojados) debe reposar en la heladera por lo menos 12 horas y ya está listo. lo presento con huevos hervidos cortados en mitades y aceitunas verdes y negras adornando.

Varenikes
Hace casi 50 días que la primavera ya debía estar aportando calor a estas tierras australes, sin embargo lejos de eso los días continúan nublados y por momentos bastante fríos, pensando en que comer esta noche, recordé una antigua, sencilla y deliciosa receta que llegó a la Argentina de la mano de las oleadas migratorias europeas, y me dije ¿por qué no? así que esta noche los muy ucranianos VARENIKES llegarán a mi mesa.
Spring must arrive since almost 50 dias ago, but far of it ,days still are grey,cloudy and really cold most of the time; thinking about what we gonna eat to night, I thinked about an old fashion simple and delicious ucranian recipe, arrived Argentina by the hand of XIX century european inmigration, and I said to myself , why not? to night we eat ucranian VARENIKES.
La receta original se ha perdido en la noche de los tiempos, y cada país de Europa Centro oriental tiene su propia manera de hacerlos, de todas las recetas yo prefiero la variante ucraniana y la variante húngara. ambas son deliciosas y difieren en pocos detalles.
Original recipe is losted in the nigth of time, every european country makes his own particular recipe, I prefer 2 ways to make it , Ucranian and Hungarian , afe litghly different but aboth are delicious.
En primer lugar la masa, es la misma de la empanada, o la tarta:
400gr de harina
1 huevo
3 cdas de aceite neutro
1 cdta sal
Todos los ingredientes se mezclan en un bowl y se trabajan hasta que la masa se forme, una vez que se despega se la deja descansar por 20 minutos, se la extiende sobre mesada enharinada y se cortan los discos
del tamaño deseado. algunas personas prefieren circulos pequeños a otras les gustan mas grandes, es su eleccion.

Para el relleno (en la version ucraniana):
1kg de papas (yo prefiero hervirlas con cascara, mantienen mejor el sabor y el puré no sale aguado)
1/2kg de cebollas cortado en pequeños trozos (brunoisse)
250gr de crema de leche
mantequilla
400gr de panceta ahumada cortada en daditos o pequeños trozos
For the filling (in the Ukrainian version):

Primeramente vamos a saltear la cebolla y la panceta con un poco de mantequilla,(muy poquita cantidad porque la panceta va a soltar materia grasa) vamos a dividir el salteado en 2 mitades iguales, una mitad se la añadimos al puré y lo dejamos refrescar. Una vez fresco rellenamos los discos de masa y mojamos ligeramente los bordes internos con agua para sellarlos .

En la receta original estas pastas van al agua hirviendo hasta que se cocinan y "suben" , yo lo hago de otra manera, las coloco en una fuente para horno y las cubro con la salsa de cebolla, panceta y crema de leche, una lluvia de queso parmesano y las dejo en horno medio/fuerte por 20 minutos hasta que se cocine la masa , porque el relleno ya está cocinado , esto me da una ventaja extra, saco los varenikes del horno gratinados y deliciosos.

ARROZ CONGRÍ vrs MOROS Y CRISTIANOS
Una de mis perdiciones es el congrí, este plato tiene la capacidad de hacer que yo devore enormes cantidades de arroz y frijoles.
Este plato delicioso viene heredado de los esclavos haitianos en su media lengua creole "Cong" se refería a los negros congos y "ri" es arroz .
Para preparar este plato comenzamos haciendo un potage de frijoles colorados ,tal y como ya les conté en una entrada anterior,pero no le ponemos huesos ni carne , solamente chicharrones de puerco, una vez que los frijoles se ablandaron, colamos todo y reservamos en diferentes bowls frijoles por un lado y liquido por otro lado. medimos, por cada taza de arroz 2 tazas de liquido de los frijoles. En la olla finalmente colocamos los frijoles blandos, y el arroz con el liquido correctamente medidos, rectificamos la sal y tomará aproximadamente 12 minutos la cocción del arroz, a fuego medio, cuando dan los 12 minutos apagamos el fuego y dejamos reposar tapado por 10 minutos mas.

Cualquiera de las dos maneras es exquisita y acompaña muy bien nuestra carne ,que ya sale del horno pero reposará por 10 minutos antes de cortarla ( de esta manera los jugos de la carne no se saldrán al cortarla...

Hummus....
Hoy sin muchas ganas de cocinar nada pero con bastante apetito , miré la alacena y encontré 2 latas de garbanzos remojados y recordé el Hummus ,plato tradicional de turcos y árabes...
Obviamente no iba a bajar al mercado así que improvisé una receta propia tratando de variar la original lo menos posible.
Tomé la licuadora de mano y coloqué en el vaso los garbanzos ( previamente los enjuagué bajo abundante agua fria para sacarle todo el sodio y los conservantes)...

Corté un tallo de cebolla de verdeo (cebollín, o ciboulette como prefieran llamarlo) y lo añadí al vaso, una punta de sal ,molí un poco de mi mezcla de 4 pimientas, negra, roja ,verde y blanca, una pizca de pimentón ahumado, 3 cucharadas de aceite de oliva extra virgen, y accioné la licuadora, a medida que iba moliendo los garbanzos se iba espesando la mezcla ,por lo que puse unas gotas de jugo de limón y 2 cucharadas de agua a temperatura ambiente, cuando la mezcla quedó cremosa la serví en un cuenco y la rocié con un poco mas de aceite de oliva...puse en una bandeja unas galletas de lino y cereales , una jarra con té verde helado, dos vasos y me fui a ver por enésima vez "Devil Wears Prada" con mi pareja...

Empanada de pollo y Eclairs au caramel -Chicken Pie and eclairs au caramel
Hoy es domingo, y me dispongo a cocinar dos recetas de mis preferidas :
Empanadas de pollo y Eclairs au caramel con crema pastelera..
Para las empanadas:
mas o menos para 20 empanadas necesitaré 1/2 pollo hervido y frio el cual voy a cortar en pequeños trozos.
En el wok con un fondito de aceite voy a poner a dorar 1 cebolla 1 diente de ajo y 1 zanahoria tambien en pequeños trozos cuando la cebolla me indica que ya está cocinada añado 1 tomate cortado en trozos igual de diminutos (es regla de la cocina que todo debe ir cortado del mismo tamaño para obtener la misma coccion)
Por esta vez ,como quiero un toque mediterráneo voy a añadir 1 berenjena cortaday voy a revolver todo, la berenjena tiende a absorber los liquidos asi que es posible que necesite un poco de caldo del pollo o de vino para desglasar y asi ayudar a la berenjena a cocinarse mejor.

-comino
-oregano
-paprika picante
-romero
-mostaza molida
-laurel molido
-sal
-pimentón ahumado
y dejo cocinar todo por 10 minutos hasta que el pollo haya absorbido todos los sabores
como me va a quedar líquido añado 3 cucharadas grandes de avena ( es nutritiva, deliciosa ,absorberá el liquido y hará que los invitados se llenen mas pronto)
coloco el relleno en una fuente y lo pongo a enfriar al menos por 2 horas en heladera

Allow to cool for 3 to 4 minutes, or until the dough is about 60 º.

Hornear los Eclairs durante 15 minutos. Bajar la temperatura a 190º y continuar horneando durante 15 ó 20 minutos más, dependiendo del tamaño que les hayamos dado hasta que estén doraditos.
Retirar la bandeja del horno y hacer un corte en el lateral de los Eclairs con un cuchillo afilado. Volver a meter en el horno, y dejarlos dentro del horno , con la puerta abierta, durante 10-15 minutos.
Dejar enfriar los Eclairs totalmente sobre una rejilla antes de rellenarlos.

Hervir durante unos minutos la leche con una pequeña piel de limón y un palito de canela. Dejar infusionar durante la noche.
Colar la leche y añadirle la cantidad necesaria hasta completar los 500 gr. Incorporar los huevos, la harina, el azúcar.
Programar 7 minutos, temperatura 90º, vel.4.
Si pasado este tiempo vemos que todavía queda líquida, ir programando minuto a minuto hasta que obtengamos la consistencia deseada.
Yo le tuve que añadir 2 minutos más y aún así estaba un poco líquida.
Reservar en un recipiente cubierto con papel film y dejar enfriar.

Una vez hecho esto en una olla pequeña coloco 1 taza de azucar, algunas gotas de escencia de vainilla y 1 cucharadita de agua y lo llevo al fuego fuerte ,cuando tome ese color dorado caracterisitico y antes de que se queme lo saco del fuego y con una cuchara esparcimos hilos de caramelo sobre el eclair y lo dejamos refrescar.
Otras recetas hablan de una ganache de chocolate para la cobertura a mi me gustan al caramelo como los que hacian en la cafeteria del teatro Karl Marx en la Habana , mi cuñada Amarilys enloquecía por esos eclairs,recuerdo que una vez me llevaron ella y mi hermano, otra vez fui con mi madre, siempre fueron excelentes los eclairs de ese lugar...mis recuerdos...los sabores..

Arroz con pollo a la cubana Rice and chicken cuban style
Hoy voy a hacer el clásico arroz con pollo, en el estilo muy personal de mi abuela.
para este plato voy a necesitar 1 pollo mediano, 1 diente de ajo, 2 tazas de arroz,1 cerveza, 1 zanahoria, cebolla de verdeo, ajo puerro, ajo, cebolla, laurel, perejil, morrón rojo, pimienta, sal, oregano, pimentón ahumado y cúrcuma ,(en muchos paises usan el azafrán, a mi ,presonalmente no me gusta demasiado el sabor que le otorga al plato, la cúrcuma es menos invasiva y mas vistosa para mi gusto).
Mi abuela comenzaba deshuesando el pollo ( en muchas casas cuando hacen arroz con pollo encuentro las patas en el plato con hueso y todo, es un tanto incómodo...) el pollo deshuesado era cortado en trozos de tamaño adecuado para caber en un bocado, estos trozos eran dorados en una olla con un fondito de aceite, cuando estaban bien doraditos por todas partes, añadía la zanahoria y la cebolla cortadas en minúsculos trocitos, mientras se cocinaban, cortaba el morrón, el ajo puerro, y el diente de ajo.

De aqui en mas serán entre 8 y 12 minutos de acuerdo al tipo de arroz utilizado, una vez que el arroz está "al dente" es decir cocinado pero aun un poco duro , lo tapamos y apagamos el fuego, lo dejamos reposar por 10 minutos y lo adornamos con arvejas y pimientos enlatados...
